The Publican
Neighborhood institution. Beer hall bones, farm plate.

Why it is on the list
The Publican is the Fulton institution: beer-hall bones, oysters first, pork that remembers the farms. Pork rinds are still required. Roast chicken if you want the plate that explains the room. Weekend waffle if you do brunch. It is loud in the good way and older than half the concepts on the market. Reserve for dinner. Walk in at the bar if you know what you are doing. This is not a trend. This is the neighborhood’s dining room.
