Why it is on the list

The Aviary is not a bar you wander into after dinner. It is the night. Ticketed cocktails, showpiece glass, food that supports the pour. The Office downstairs if you can get in. One or two serious drinks beats three of the same. Come curious, not sloppy. Achatz built a theater for liquid; treat it like one. Dinner next door is a separate decision.
