Adalina Prime is Soo Ahn’s cathedral steakhouse on Green: two-story cellar, a salt library, Illinois Wagyu that wants an expense account. It is not Swift’s cold-storage theater and it is not the Gold Coast Adalina with a different sign. Book it when the table needs drama and a cut. Happy hour in the lounge is the cheaper way in — bar only, 4 to 6, weekdays. The room is the point. Dress like it.
